- Fries: Frozen fries work great here and keep this recipe fast and easy. Use your favorite cut, but thicker fries like crinkle cut or steak fries hold up best under the toppings.
- Beef: Thinly sliced beef cooks quickly and stays tender. I used ribeye, but sirloin, flank steak, or shaved steak all work well. Slice against the grain for the best texture.
- Soy Sauce: This adds savory depth and seasons the beef as it cooks. Use low-sodium soy sauce if you prefer more control over the salt level.
- Barbecue Sauce: A touch of barbecue sauce adds sweetness and helps create a glossy coating on the beef. Choose a simple, smoky sauce rather than something overly thick or sugary.
- Mayonnaise: Regular mayonnaise works best for the spicy sauce. It creates a creamy base that balances the savory beef and salty fries. I like Hellmann’s.
- Sriracha: This brings heat and a little tang to the sauce. Add more or less depending on how spicy you like your fries.
- Green Onions: Fresh green onions add color and a mild bite that cuts through the richness of the fries and sauce.
How to Make Korean Loaded Fries
Prepare the fries according to the package directions until golden and crispy. Extra crispy fries hold up best once the toppings are added.
Heat a skillet over medium-high heat. Add the sliced beef and cook for 2 to 3 minutes, stirring often, until browned and cooked through. Stir in the soy sauce and barbecue sauce and cook for another 1 to 2 minutes until the beef is saucy and glossy

In a small bowl, stir together the mayonnaise and sriracha until smooth. Taste and adjust the heat if needed.
Transfer the hot fries to a serving plate or bowl. Spoon the saucy beef over the fries, then drizzle generously with the spicy mayo. Sprinkle with chopped green onions and serve immediately while hot and crispy.

Recipe Tips
- Get the fries extra crispy: Bake or fry the fries until deeply golden. Crispy fries hold up better once the beef and sauce are added.
- Do not overcrowd the pan: If your skillet is small, cook the beef in batches. Crowding the pan can cause the beef to steam instead of brown.
- Slice the beef thin: Thin slices cook quickly and stay tender. Always slice against the grain for the best texture.
- Adjust the heat level: Start with less sriracha and add more to taste. You can always drizzle extra on top at the end.
- Add more flavor if you want: For a deeper Korean-inspired flavor, stir a small spoonful of gochujang into the beef sauce while it cooks.
- Serve right awa: These fries are best eaten hot. Once assembled, the fries will soften as they sit.
