Brownie Batter Cinnamon Rolls

If you loved my viral Oreo Japanese yogurt cheesecake, wait until you try this mashup. These brownie cinnamon rolls take the TikTok trend and turn canned cinnamon rolls and brownie mix into the most rich and gooey, chocolate breakfast dessert.

I love that using canned cinnamon rolls keeps it simple, while the brownie mix adds deep chocolate flavor without extra steps. It’s the easiest way to turn two classics into one over-the-top treat that will have your family begging you to make this over and over again whether its a snow day or lazy weekend.

  • Pillsbury Grands Cinnamon Rolls: These work best because they are thick and sturdy enough to hold the brownie filling. Any large canned cinnamon rolls will work, but avoid the smaller, thinner varieties.
  • Brownie Mix: A 10.5 ounce brownie mix gives you rich chocolate flavor without extra measuring. Any standard smaller sized bagged or boxed brownie mix works here. Fudge style will give you a deeper chocolate center.
  • Egg: Helps bind the brownie batter so it bakes up soft and fudgy inside the cinnamon rolls.
  • Vegetable Oil: Keeps the brownie filling moist and tender. You can swap with canola oil if needed.
  • Chocolate Chips: Used for the final drizzle. Semi sweet or milk chocolate both work depending on how sweet you want the finished rolls.

How to Make Brownie Cinnamon Rolls

In a medium bowl, stir together the brownie mix, egg, and vegetable oil until smooth and fully combined. The batter will be thick.

Lightly flour a large piece of parchment paper, then carefully unroll the cinnamon roll dough so it lays flat. Spread a thin, even layer of brownie batter over the entire surface of the dough.

Roll the dough back up tightly into a log. Using a sharp knife, slice along the perforation lines to separate the rolls.

Place the rolls on the prepared baking sheet and bake at 350°F for 15 to 20 minutes, until the cinnamon roll dough is cooked through and the brownie center is set.

While the rolls are still warm, spread the included icing over the top.

Melt the chocolate chips in 30 second intervals in the microwave, stirring between each, then drizzle over the rolls before serving.

Recipe Tips

  • Spread a thin layer of batter. Do not overload the dough with brownie batter. A thin, even layer helps the rolls bake through without becoming too dense in the center.
  • Roll tightly. When rolling the dough back up, keep it snug. A tight roll gives you those beautiful swirls and helps hold the brownie filling in place.
  • Use a sharp knife and wipe between cuts. The brownie filling makes the dough softer and slightly sticky. Slice with a sharp knife and wipe it clean between cuts to keep the swirls neat instead of squishing the rolls.
  • Chill briefly if needed. If the rolled log feels very soft after adding the brownie batter, place it in the fridge for 5 to 10 minutes before slicing. This firms it up just enough for cleaner cuts.
  • Let them cool slightly before serving. The brownie center sets as it cools, giving you that perfect fudgy texture.
