  • Klondike bars: These make the base of the cake and give you those easy built-in layers of vanilla ice cream and chocolate coating.
  • Whipped topping: Adds a light, creamy layer and helps balance the richer chocolate and fudge flavors.
  • Hot fudge sauce: Mixed with the cookie crumbs, it creates a soft, fudgy center that holds everything together.
  • Oreo cookies: Crushed into crumbs, they add cookies-and-cream flavor and a little texture to the filling.
  • Garnish: Chocolate syrup and rainbow sprinkles.

How to Make Klondike Bar Ice Cream Cake

Crush the Oreo cookies into fine crumbs, then stir them together with the hot fudge sauce until thick and well combined. The mixture should look rich and spreadable, almost like a soft cookie fudge layer.

Place a layer of Klondike bars in the bottom of the pan, fitting them snugly so they cover the base as evenly as possible. Spread half of the whipped topping over the bars, then spoon and spread on the Oreo fudge mixture.

Add the second layer of Klondike bars on top, then finish with the remaining whipped topping. Smooth the top, drizzle with chocolate syrup, and add rainbow sprinkles if you want that classic ice cream cake look.

Cover the cake and freeze until firm enough to slice cleanly. Once it is fully set, slice, and serve right away.

Recipe Tips

  • Line the loaf pan with parchment paper, leaving some overhang so the cake is easier to lift out later. This is one of those little steps that makes serving much less messy.
  • Work quickly: Klondike bars soften fast, so it helps to have the pan, filling, and topping ready before you start layering.
  • Crush the Oreos finely: Smaller crumbs mix more evenly with the hot fudge and make the center easier to spread.
  • Soften the hot fudge if needed: If it is too thick straight from the jar, warm it just enough to stir easily with the cookie crumbs.
  • Press the bars in snugly: Try to fit the Klondike bars as closely as possible so the layers hold together nicely when sliced.
  • Freeze until firm: The cake needs enough time to set all the way through or the slices can get messy fast.
  • Slice with a warm knife: Running your knife under warm water and drying it off first makes cleaner slices.
