  • Sugar cookie mix: I used Betty Crocker sugar cookie mix for an easy shortcut base. You can use any brand, just be sure to use the size called for in the recipe, since some mixes can vary a little.
  • All purpose flour: A little extra flour helps give the dough enough structure so the cookies hold their shape and stay soft.
  • Butter: I like using softened butter because it mixes in easily and gives the cookies a rich, buttery flavor.
  • Egg: This helps bind the dough together and gives the cookies structure.
  • Rainbow sprinkles: These add the festive pop of color on the outside. Jimmies work best because they hold their shape better than nonpareils.
  • Hershey’s Hugs: Unwrap the chocolate candies before you start baking so they are ready to press into the warm cookies right away. Use any variety for these sugar cookies with Hershey’s Kisses.

In a large bowl, stir together the sugar cookie mix, flour, softened butter, and egg until a soft dough forms. The dough will be thick, but it should come together easily as you mix.

Scoop the dough and roll it into balls, then roll each one in rainbow sprinkles so the outside is fully coated. Place them on a parchment-lined baking sheet, leaving a little space between each cookie.

Bake until the cookies are just set around the edges but still soft in the center. As soon as they come out of the oven, gently press a Hershey’s Hug into the center of each one.

Let the cookies cool on the pan for a few minutes, then transfer them to a wire rack to finish cooling. The chocolate will stay soft at first, so let it set before stacking or serving.

Recipe Tips

  • Do not overbake: These cookies are best when they stay soft in the center. Bake just until the edges are set, because they will continue to firm up a little as they cool.
  • Match the sprinkles to the holiday: Swap the jimmies for holiday colors or themed sprinkles. It’s a simple way to make them work for Christmas, Easter, birthdays, baby showers, and more.
  • Try colored sugar instead: If you want a different look or texture, roll the dough balls in colored sanding sugar. The finish will be a little more sparkly.
  • Make ahead and freeze: The dough can be made ahead and kept in the refrigerator for 2 to 3 days or frozen for longer storage. Thaw frozen dough in the refrigerator, then let it sit at room temperature just until soft enough to scoop and roll.
