These coconut sugar cookie bars start with a shortcut base and finish with fluffy coconut frosting on top. They’re soft, sweet, and perfect when you’re craving a treat.

Coconut Sugar Cookie Bars are Pure Coconut Bliss
These coconut sugar cookie bars are an easy way to take a simple shortcut and turn it into something a little more special. Starting with a sugar cookie mix like my Betty Crocker sugar cookie bars gives you a soft, buttery base, but here we add coconut extract and frosting making it perfect for coconut lovers.
If you’ve made my lemon sugar cookie bars before, you already know how good this style of bar can be. This version leans a little richer and more dessert, with a fluffy coconut topping and a sprinkle of coconut and almonds that adds just the right texture and makes them a great sweet treat for sharing.

- Sugar cookie mix: This shortcut is what keeps these bars quick and consistent. I used Betty Crocker, but any 17–18 oz sugar cookie mix will work.
- Butter: Use softened butter so it mixes easily into both the dough and the frosting. If it’s too cold, the dough won’t come together as smoothly.
- Egg + extra yolk: The extra yolk is key here. It adds richness and helps give the bars that soft, bakery-style texture.
- Coconut extract + vanilla extract: The combination gives the best flavor. Coconut extract brings the main flavor, while vanilla rounds it out so it doesn’t taste too artificial.
- Powdered sugar: Make sure it’s sifted for a smooth, creamy frosting without lumps.
- Heavy whipping cream: This helps create that light, fluffy frosting texture. You can add a little more if needed to get it perfectly spreadable.
- Sweetened shredded coconut: Stirred into the frosting for texture and extra coconut flavor. It also helps give that classic coconut bar look.
- Sliced almonds (optional): These add a light crunch and balance the sweetness. Totally optional, but they really make the bars feel finished.

The dough will be thick, and that’s exactly what gives these bars their soft, bakery-style texture.

Press the dough evenly into a parchment-lined pan so it bakes up nice and even. Bake just until the edges are lightly golden. Don’t over bake or you’ll lose that soft center.
Once the bars are completely cool, spread the frosting evenly over the top. Finish with shredded coconut and sliced almonds for a little texture and a more bakery-style look.

Frosting for Coconut Sugar Cookie Bars
Beat the butter until smooth and creamy, then mix in the powdered sugar, cream, and extracts until the frosting is light and fluffy. You want it soft and spreadable, not stiff.
Stir in the shredded coconut, then spread the frosting over the completely cooled bars. Finish with extra coconut and sliced almonds for the best texture and flavor.

Recipe Tips
- Don’t over bake: These coconut sugar cookie bars should be soft with lightly golden edges. The centers will set as they cool.
- Use the right pan size An 8-inch pan gives you thicker, softer bars. A 9-inch pan will work too, but the bars will be thinner and bake a little faster.
- Easy frosting shortcut: Use canned vanilla frosting and stir in shredded coconut for a quick, no-mix option.
- Toast for extra flavor: Toast the coconut or sliced almonds for a few minutes in the oven to bring out more flavor and crunch.
- Line your pan with parchment: This makes it much easier to lift out the coconut sugar bars out and slice them into clean squares.

I also loved how easy the recipe was to follow — everything came together quickly and baked perfectly. These were a huge hit with my family and disappeared way faster than I expected. Definitely making them again for the next get-together!
