Starting with a sugar cookie mix means you can skip the extra steps while still getting a soft, buttery base. It bakes up perfectly tender and pairs beautifully with the bright lemon curd, giving you bakery-style cookies with minimal effort.

  • Sugar cookie mix: I used a 17.5 ounce Betty Crocker mix, but any similar sugar cookie mix will work. This is what keeps the recipe quick and easy while still giving you a soft, buttery cookie.
  • Butter: Use unsalted butter softened to room temperature so it mixes smoothly into the dough. If it’s too cold, the dough won’t come together as easily.
  • Egg: A room temperature egg blends more evenly into the dough and helps create a soft texture.
  • All-purpose flour: Just a small amount helps give the dough a little more structure so the cookies hold their shape after baking.
  • Lemon zest: This is where a lot of the fresh lemon flavor comes from, so don’t skip it. Use finely grated zest for the best texture.
  • Sparkling sugar: Adds a light crunch and a pretty finish on top of the cookies. You can swap with coarse sugar or even granulated sugar if needed.
  • Lemon curd: Use your favorite store-bought lemon curd or homemade. A thicker curd works best so it sits nicely in the center without running.

How to Make Lemon Thumbprint Cookies

In a medium bowl, mix together the sugar cookie mix, softened butter, egg, flour, and lemon zest until a soft dough forms.

It might look a little crumbly at first, but keep mixing and it will come together.

Scoop the dough into tablespoon-sized portions and roll into balls. I like using a cookie scoop here to keep them even. Roll the tops in sparkling sugar, then place them on the baking sheet with a little space between each one.

Bake just until the edges are set. They should still look soft in the center, that’s what keeps them tender. As soon as they come out of the oven, gently press a small indentation into the center of each cookie using the back of a spoon.

Let the cookies cool completely before adding the filling. This part matters, if they’re still warm the lemon curd will melt and slide.

Spoon a small amount of lemon curd into each center, then finish with a drizzle of lemon glaze if you want a little extra sweetness.

Tips for the Best Lemon Thumbprint Cookies

  • Don’t overbake: The centers should still look soft when you pull them out. They’ll finish setting as they cool and stay nice and tender.
  • Press the centers right away: Make the indentation as soon as the cookies come out of the oven while they’re still soft. If you wait too long, they can crack.
  • Cool before filling: Let the cookies cool completely before adding the lemon curd so it stays thick and doesn’t melt into the cookie.
  • Use a thicker lemon curd: A thicker curd holds its shape better and gives you that clean, bakery-style center.
  • Glaze for extra sweetness: If your lemon curd is on the tart side, a simple lemon glaze (powdered sugar + fresh lemon juice) adds a nice balance and a pretty finish.
  • Keep them uniform: Using a cookie scoop helps the cookies bake evenly and gives you that consistent look.

Ingredients

  • 17.5 ounce sugar cookie mix , I used Betty Crocker
  • 1/2 cup unsalted butter , softened to room temperature
  • 1 egg , room temperature
  • 3 Tablespoons all-purpose flour
  • 2 teaspoons lemon zest
  • 2 Tablespoons sparkling sugar , or coarse sugar
  • 1/2 cup lemon curd

Optional: Lemon glaze

Instructions

  • Prep. Preheat oven to 375°F and line two baking sheets with parchment paper.
  • In a medium bowl, combine cookie mix, softened butter, egg, flour and lemon zest. Mix together until a soft dough forms.
  • Place sparkling sugar in a shallow bowl. Using a 1 Tablespoon cookie scoop, shape into balls then dip the top of each cookie into sugar. Place cookie balls sugar side up and 2 inches apart on prepared parchment lined baking sheets.
  • Bake 7-9 minutes or until edges are set (mine took 8 minutes). Cool for 1-2 minutes then make a small indentation in the center of each cookie. I used the back of a wooden spoon. Remove cookies from baking sheet to wire cooling rack and cool completely.
  • Once the cookies are cool, fill the indentation with lemon curd using about 1/2 teaspoon for each cookie. Add glaze if desired.

Notes

Lemon glaze: Sift 1 cup confectioners’ sugar into a medium bowl. Gradually add 2 tablespoons fresh lemon juice. Adjust to desired consistency with more sugar or lemon juice. Drizzle over cookies with a spoon.
Store cookies covered in the refrigerator for about a week or flash freeze then store in a freezer safe container for 2-3 months.
