Frosted Coconut Sugar Cookie Bars

These coconut sugar cookie bars start with a shortcut base and finish with fluffy coconut frosting on top. They’re soft, sweet, and perfect when you're craving a treat.

Ingredients

Frosting

  • 1/2 cup unsalted butter , room temperature
  • 2 1/2 cups powdered sugar , sifted
  • 1/4 cup heaving whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon coconut extract
  • 1/2 cup sweetened shredded coconut
  • flaked almonds , if desired

Instructions

  • Preheat oven to 375°F. Prep a 8" square baking by spraying it with baking spray then lining it parchment paper.
  • Mix. In a medium side bowl, add sugar cookie mix, softened butter, egg, egg yolk and both extracts. Stir until combined and a soft dough starts to form.
  • Press. Spoon sugar cookie dough into prepared pan and press with hands to form an even layer.
  • Bake. Bake for 20-25 minutes until the corners are just golden brown (mine took 22 minutes). Remove from the oven, cool in the pan 10 minutes then lift parchment paper with cookie bars out of pan. Cool completely before frosting.

Frosting

  • In a medium mixing bowl on medium speed, whip butter until smooth and creamy then beat in powdered sugar alternating with the cream and extract.
  • Stir in shredded coconut. Spread frosting over baked cookie bars and add flaked almonds on top, if desired.

Notes

You can use a 9 inch baking dish if preferred. Metal baking dishes bake faster than glass dishes. 
I prefer to cut them into 4x4 rows. My teenagers wanted them quite larger, so you can do 3x3 if preferred.
Store in an airtight container at room temperature for 3-5 days. If you prefer them cold, you can store them in the refrigerator or cold winter garage (like I did). 
Freeze unfrosted sugar cookie bars up to 3 months.
