These Korean beef sloppy Joes are an easy dinner upgrade that feels familiar but unique at the same time. Ground beef simmers in a rich sesame soy sauce and comes together in about 20 minutes, making it perfect for busy weeknights.

- Ground beef: I used 85/15 lean ground beef for this recipe as it keeps the sloppy joes flavorful without becoming greasy. If using a higher-fat blend, be sure to drain off excess fat after browning.
- Soy sauce: This adds the signature savory, umami flavor. Use low-sodium soy sauce if you prefer more control over the saltiness or tamari for gluten-free.
- Brown sugar: Brown sugar balances the savory soy sauce and gives the beef that classic sweet and sticky sloppy joe finish. Light or dark brown sugar both work.
- Ketchup: Ketchup adds tang, sweetness, and body to the sauce. It also helps create that familiar sloppy joe texture.

How to Make Korean Sloppy Joe Sandwiches
Heat a large skillet over medium heat. Add the ground beef and cook, breaking it up as it browns, until fully cooked. This should take about 5 to 7 minutes. Drain off any excess grease.
Add the soy sauce, brown sugar, ketchup, and sesame oil to the skillet. Stir well so the beef is evenly coated, then let it simmer for 2 to 3 minutes. The sauce should thicken slightly and cling to the meat.


While the beef simmers, lightly toast the burger buns in a toaster or dry skillet until warm and lightly golden.
Spoon the saucy beef mixture onto the bottom halves of the buns. Finish with chopped green onions and sesame seeds, if using. Add the top buns and serve right away.
