These Korean beef sloppy Joes are a fun spin on a classic with sweet, savory, and just a little spicy flavor. Easy to make for weeknight dinners with saucy ground beef served on soft brioche buns.

Ingredients

  • 1 pound ground beef
  • 4 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 1/4 cup ketchup
  • 1 Tbsp sesame oil

For serving: Hamburger buns, sesame seeds, green onions

Instructions

  • Brown the beef: In a large skillet over medium heat, cook the ground beef, breaking it up with a spoon, until browned and fully cooked, about 5–7 minutes. Drain excess fat if needed.
  • Add the sauce: Stir in the soy sauce, brown sugar, ketchup, and sesame oil. Let the mixture simmer for 2 to 3 minutes, stirring occasionally, until the sauce thickens slightly and coats the beef.
  • Toast the buns: While the beef simmers, lightly toast the burger buns in a dry skillet or toaster until warm and lightly golden.
  • Assemble and serve: Spoon the saucy beef onto the bottom halves of the buns. Top with chopped green onions and a sprinkle of sesame seeds, if using. Add the top buns and serve immediately.

Notes

Store the Korean ground beef in an airtight container in the refrigerator up to 3 days or freeze up to 3 months.
Swap ground beef for ground turkey or ground chicken.
