Mexican Style Ranch Taco Bites

These taco ranch bites are one of my go-to party appetizers when I want bold flavor without spending all day in the kitchen. The crunchy tortilla scoops are loaded with seasoned beef and melted cheese, and they disappear fast once they hit the table.

I love serving them with my Mexican street corn soup to round out a simple Mexican-inspired spread.

  • Ground beef: Lean ground beef works best so the filling isn’t greasy. Be sure to drain excess fat after browning for crisp, sturdy bites.
  • Taco seasoning: Use your favorite store-bought taco seasoning. This is where most of the flavor comes from.
  • Ranch seasoning: Ranch seasoning mix adds a subtle creamy, herby flavor that balances the taco spices without overpowering them.
  • Tortilla scoop chips: Scoop-style tortilla chips are sturdy and hold the filling well without breaking. Arrange them close together on the baking sheet for easy filling.
  • Shredded cheese: Cheddar or a Mexican-blend cheese melts smoothly and adds richness. Freshly shredded cheese melts best, but pre-shredded works in a pinch.
  • Tomatoes: Finely diced tomatoes add freshness and color. Remove excess juice so the chips stay crisp.
  • Cilantro: A small sprinkle of fresh cilantro adds a bright finish. You can leave it off if cilantro isn’t your thing.

How to Make Taco Ranch Bites

Start by browning the ground beef in a skillet over medium heat. Once it’s fully cooked, drain off any excess grease, then stir in the taco seasoning, ranch seasoning, and water.

Let it simmer for a couple of minutes until everything is well coated and flavorful.

Preheat the oven to 350°F and arrange the tortilla scoop chips on a baking sheet. Spoon the seasoned beef into each chip, add a few diced tomatoes, and finish with shredded cheese.

Bake for 5–7 minutes, just until the cheese is melted and bubbly. Sprinkle with fresh cilantro and serve warm with your favorite toppings.

  • Serve them immediately: Enjoy these taco ranch bites straight from the oven while the cheese is melted and the chips stay crisp.
  • Prep the taco meat ahead: Cook and season the beef up to 2 days in advance, then store it in an airtight container in the refrigerator. Reheat before assembling and baking.
  • Use pico de gallo: Swap the diced tomatoes and cilantro for pico de gallo to add extra freshness and flavor.
  • Swap the ranch seasoning: Replace the dry ranch seasoning with ranch dressing if you prefer a creamier taco filling.

Ingredients

  • 1 pound ground beef
  • 2 Tablespoons taco seasoning
  • 1 Tablespoons dry ranch dressing mix
  • 1/4 cup water
  • 24 mini tortilla scoops , I used Tostitos
  • 1 cup cheddar cheese , shredded
  • 1 small tomato , diced
  • 2 Tablespoons fresh cilantro , chopped

Optional toppings: Sour cream, Guacamole and salsa

Instructions

  • Brown the beef. Heat a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Drain off any excess grease.
  • Season and simmer. Stir in the taco seasoning, ranch seasoning, and water. Let the mixture simmer for 2–3 minutes, stirring occasionally, until thickened and well coated with seasoning.
  • Prep for baking. Preheat the oven to 350°F. Arrange the tortilla scoop chips in a single layer on a baking sheet.
  • Assemble the bites. Spoon the seasoned beef evenly into each tortilla scoop. Sprinkle with diced tomatoes, then top with shredded cheese.
  • Bake. Bake for 5–7 minutes, just until the cheese is melted and bubbly and the chips are warmed through.
  • Finish and serve. Remove from the oven and sprinkle with fresh cilantro. Serve warm with sour cream, guacamole, or salsa on the side.

Notes

Substitute: You can use frozen phyllo shells instead of tortilla scoops, baking time will increase to 8-10 minutes. 
Can use a Mexican cheese blend instead, but I prefer to grate cheese from a block. 
These are best served fresh.
