This Fruit Pizza Cookie Cups are Perfect for Summer

My sister in law makes the best fruit pizza, hands down. The trouble is that slicing and serving a big fruit pizza at a cookout is not exactly handy. These fruit pizza sugar cookie cups give you all that same flavor in a grab-and-go individual serving size. There’s no cutting and no fork needed even.

They start with a boxed sugar cookie mix, which means the dough comes together in one bowl with a wooden spoon. Once they’re baked, you pipe in a whipped cream cheese filling and top each one with fresh berries, kiwi, and mandarin oranges.

Bring these to a potluck, baby shower, Fourth of July barbecue, or picnic and watch them disappear. They look like little fruit tarts from a bakery, but nobody needs to know how easy they were. That’s my kind of summer dessert.

  • Sugar cookie mix: One 17.5 ounce pouch is all you need. I used Betty Crocker, but any brand works. The mix keeps the cookie base soft and buttery without measuring flour and sugar.
  • Unsalted butter: Softened, so it blends into the dough easily.
  • Egg and vanilla: These enrich the dough and give it that bakery-style flavor boxed mix sometimes lacks on its own.
  • Cream cheese: Use full-fat brick-style cream cheese, softened to room temperature. Cold cream cheese will leave lumps in your filling no matter how long you whip it.
  • Powdered sugar: Sift it first, then add it gradually. Start with 3/4 cup and taste. Add up to a full cup if you like a sweeter filling.
  • Whipped topping: One cup of Cool Whip folded in makes the filling light and mousse-like instead of dense like frosting. You can use homemade whipped cream but since it’s not stabilized the filling might not hold as well.
  • Fresh fruit: Strawberries, blueberries, raspberries, kiwi, and mandarin oranges are my go-to combo for color. Dice the strawberries, kiwi, and oranges small. Blueberries and raspberries can stay whole.

Stir the sugar cookie mix, softened butter, egg, and vanilla together in a medium bowl until a soft dough forms. A wooden spoon and a little elbow grease is all it takes.

Scoop the dough into 1 Tablespoon balls and drop one into each well. Here’s the trick that makes these work: press a small indentation into the center of each ball with your finger or the back of a 1/2 teaspoon. That dent is what turns a cookie into a cup.

Bake for 12 to 14 minutes, until the edges are set and lightly golden. The centers will look soft and puffed, so press them back down with that same 1/2 teaspoon as soon as the pan comes out of the oven to restore the wells. Cool in the pan for 15 minutes, then move to a wire rack to cool completely.

While the cookie cups cool, make the filling. Whip the softened cream cheese with an electric mixer until it’s light and fluffy, then mix in the vanilla and salt. Add the powdered sugar 1/2 cup at a time, mixing well after each addition, then fold in the whipped topping by hand so it stays airy.

Transfer the filling to a piping bag or a zip top bag with the corner snipped off and fill each cooled cookie cup.

Top with diced fruit and whole berries, then it’s time to serve the fruit cheesecake sugar cookie cups. The piping bag isn’t just for looks. It gets the filling into those little wells far neater than a spoon ever will.

Recipe Tips

  • Spray muffin tin well. Don’t skip the spray. These fruit pizza cookie cups will cling to a bare pan.
  • Cool completely before filling. Warm cookie cups will melt the cream cheese filling into a puddle. If you’re short on time, pop the cooled cups in the fridge for 10 minutes to be safe.
  • Pat the fruit dry. Blot diced strawberries, kiwi, and mandarin oranges with a paper towel before topping so the filling doesn’t get watery.
  • Skip the extra-juicy fruit. Watermelon or any melon will release too much moisture and turn the filling soupy, and frozen fruit is even worse once it thaws. Canned fruit works if it’s drained well.
  • Make them ahead in stages. Bake the cookie cups a day early and store them airtight at room temperature. Make the filling and keep it in the fridge. Assemble a few hours before serving for the freshest look.

Ingredients

Instructions

  • Preheat the oven to 350°F. Lightly spray a 24-well mini muffin pan with nonstick spray and set aside.
  • In a medium bowl using a wooden spoon, combine the sugar cookie mix, butter, egg, and vanilla extract. Mix until a soft dough forms.
  • Scoop the dough into 1 Tablespoon balls and place in the prepared mini muffin pan, filling each well evenly. Use your finger or the back of a 1/2 teaspoon to press a small indentation into the center of each dough ball to form a cup.
  • Bake for 12 to 14 minutes, until the edges are set and lightly golden. The centers will look soft and slightly puffed.
  • Remove the pan from the oven and gently press down the centers with the 1/2 teaspoon again. Let the cookie cups cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Filling and Fruit

  • Place the cream cheese in a large bowl mixing bowl. Whip with an electric mixer until light and fluffy.
  • Add vanilla and salt then mix again. Add the powdered sugar a 1/2 cup at a time, fully mixing it into the cream cheese each time. Add more or less powdered sugar as needed.
  • Fold in the whipped topping.
  • Add frosting to a piping bag or zip top bag with the corner cut off and fill the center of each cup.
  • Slice fruit into small pieces (can leave blueberries and raspberries whole) and garnish each cookie cup top. Serve immediately.

Notes

Strawberries, kiwis and mandarin oranges will need to be diced. You can leave blueberries and raspberries whole.
Serve immediately or store up to 2-3 days in the refrigerator.
You could use lemon curd instead of the cream cheese filling.
