- 15.25 ounce white cake mix
- 2 eggs , room temperature
- 1/3 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 Tablespooon cornstarch
Preheat oven to 350°F and line two baking sheets with parchment paper.
In a large mixing bowl, add cake mix, eggs, vegetable oil and vanilla. Using a spatula or wooden spoon, stir until combined.
Place powdered sugar and cornstarch into a shallow bowl, stir to combine.
Scoop dough into balls using a 1 1/2 Tablespoons cookie scoop. Roll each ball into the powdered sugar mixture (I like to coat twice).
Place each cookie ball onto prepared baking sheets spacing at least 2"-3" inches part.
Bake 8-10 minutes until lightly golden on the bottom (mine took 8 minutes).
Cool for 5 minutes on the baking sheet then remove to a wire rack to cool completely.
You can use any cake mix you like to change the flavor.
Use different extract like lemon, mint or orange.
Store up to 5 days in an airtight container away from sunlight. Freeze baked cookies without powdered sugar coating for 2 months. Thaw then sprinkle with sugar before serving.
