Slow Cooker Sausage Potato Soup

- 4 cups chicken broth
- 1 pound ground Italian sausage , browned and drained
- 1 small yellow onion , diced
- 2 Russet potatoes , peeled and cubed
- 1 14 ounce can diced tomatoes
- 1 6 ounce can tomato paste
- 1 cup heavy cream
- 1 8 ounce block cream cheese , cubed
- 1/2 cup Parmesan cheese , shredded
- 1 teaspoon garlic , minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Garnish: Fresh parsley
Brown sausage in a skillet over medium heat until cooked through. Drain excess grease.
Add to crockpot sausage, chicken broth, onion, potatoes, diced tomatoes, tomato paste, garlic, salt, Italian seasoning, and pepper to the slow cooker. Stir to combine.
Cover and cook on high for 3½ hours or low for 5½ hours, until potatoes are tender.
Stir in heavy cream, cream cheese, and Parmesan cheese. Mix until melted and creamy.
Cover and cook on low for 30 minutes more.
Stir again before serving and garnish with fresh parsley. Enjoy warm!
I used large Russet potatoes, if you only have smaller sized potatoes, I would use 3-4 potatoes.
Storage: Cool to room temperature then store in an airtight container, in the fridge for 5 days. I don't recommend freezing due to the potatoes and dairy.
