Ingredients

  • 4 cups potatoes , peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 10.5 ounce cream of chicken soup
  • 1 8 ounce block cream cheese
  • 1 white onion , diced
  • 5 thick bacon strips , fried and crumbled
  • 1 ounce ranch seasoning packet
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Garnish: Chopped green onions, crumbled bacon, shredded cheddar cheese

Instructions

  • Add to the crock pot base the diced potatoes, chicken broth, cream of chicken soup, onion, cream cheese, ranch seasoning, salt, and pepper to a slow cooker. Stir to combine.
  • Cover and cook on low for 6 hours 45 minutes, until potatoes are tender.
  • Stir in shredded cheddar cheese and cook 15 minutes longer, until melted. Stir again.
  • Garnish with extra cheese, bacon, and green onions if desired.

Notes

Avoid cooking on high as dairy ingredients may curdle.
Storage: Cool to room temperature and store in an airtight container for up to 3 days. Do not freeze as the texture will change.
