- 6 cups mixed salad greens
- 1 cup cherry tomatoes
- 1 cup mozzarella balls , bocconcini
- 1/2 cup cucumber , sliced
- 1/4 cup black olives , pitted
- 1/4 cup pomegranate seeds
- 2 Tablespoon basil leaves , fresh
- 2 Tablespoon olive oil
- 1 Tablespoon balsamic glaze
- salt and pepper , to taste
Start by arranging your mixed greens on a large round platter, shaping them into a wreath. Keep the center open so it really looks like a holiday ring.
Tuck the cucumber pieces throughout the greens to give the wreath a little structure and crunch.
Add the “decorations”: scatter the tomatoes, mozzarella balls, olives, and pomegranate seeds evenly around the wreath.
Slip in a few fresh basil leaves to add Caprese style.
Drizzle the whole salad with olive oil and a little balsamic glaze.
Finish with a pinch of salt and black pepper, then serve right away as your holiday table centerpiece.
Salad greens: I like a mix of arugula, spinach and baby lettuce. Spring greens also work.
Caprese Christmas wreath: For a true Caprese style, leave out the olives and pomegranate.
Balsamic glaze can be found in the salad dressing aisle or next to the cooking oils and vinegars depending on your store.
