Cake Mix Churro Cookies

- 15.25 ounce French vanilla cake mix
- 2 eggs , room temperature
- 1/3 cup vegetable oil
- 1/2 teaspoon ground cinnamon
- 1/3 cup granulated sugar
- 2 teaspoons cinnamon
Caramel Icing
- 1 1/2 Tablespoons unsalted butter
- 2 Tablespoons heavy cream
- 1/4 cup brown sugar
- 3/4 cup powdered sugar
- 1/8 teaspoon salt
- dash of vanilla extract
Chocolate Ganache
- 1/4 cup heavy cream
- 2 ounces semi-sweet chocolate , chopped
Preheat oven to 350°F degrees and line two baking sheet with parchment paper.
Combine cake mix, 2 eggs, vegetable oil and 1/2 teaspoon ground cinnamon in a mixing bowl and stir until combined. Dough will be thick.
Add granulated sugar and 2 teaspoons ground cinnamon to a shallow bowl and stir to combine.
Using a medium cookie scoop, scoop dough into balls and roll in cinnamon sugar. Place on cookie sheet evenly spaced apart as the cookies do spread some.
Bake for 8-10 minutes (mine took 8 minutes) or until lightly golden on bottoms. Remove from oven and let cool on pan for a few minutes before transferring to a wire rack to cool completely.
Caramel Glaze
Combine butter, brown sugar and cream in a small saucepan on the stove. Turn to low heat and whisk until the mixture begins to boil.
Remove from heat and add powdered sugar a little a time until desired consistency is reached.
Cool slightly then drizzle over cookies while still warm.
Chocolate Ganache
Heat heavy cream in a microwave safe bowl for about 15-30 seconds until heated through.
Add chopped chocolate to the warm cream, let sit for a few minutes then stir until smooth.
Drizzle over cookies.
Be mindful of the size of your cake mix. If you can only find a 13.25 ounce cake, you will need to add two more ounces. To do that grab a kitchen scale for weighing purposes and add some sugar, flour and a pinch of baking powder to it until it equals 15.25 ounces. I used more flour than sugar.
You can double the caramel glaze if you only want to use a a caramel topping.
These are also great without a glaze.
