Ingredients

  • 1 cup cauliflower rice , frozen
  • 1 cup coconut water
  • 1 cup almond milk , unsweetened
  • 1 cup fresh blueberries , or frozen
  • 1 banana , frozen
  • 2 Tablespoons honey
  • 2 Tablespoons chia seeds
  • 10 ice cubes

Instructions

  • Combine frozen cauliflower rice, coconut water, almond milk, banana, blueberries, honey, chia seeds and ice cubes in a high powered blender.
  • Blend until smooth, stopping to scrape down sides as needed.
  • Adjust consistency as desired by adding more ice, sweetener or milk.
  • Pour into two glasses and serve immediately.

Notes

If using frozen blueberries, you may need additional almond milk (¼ cup or less)
I used unsweetened almond milk, use milk of choice 
Additional protein: Add 2 Tbsp up to ¼ cup nut butter
