1 1/2 cupscooked chicken, shredded
3-5 TablespoonsBBQ sauce
1cupmozzarella cheese, or mix of cheddar and mozzarella
1smallred onion, thinly sliced
1smallred bell pepper, thinly sliced
1-2Tablespoonsparsley, or cilantro
Instructions
Preheat the oven: Set your oven to 390°F (200°C). If you're using a store-bought pizza crust, check the package for specific baking instructions.
Prep the base: Lay the flatbreads on a baking sheet lined with parchment paper for easy cleanup.
Mix the chicken: In a bowl, toss about 1 ½ cups of shredded cooked chicken with 3 tablespoons of BBQ sauce. Let it sit for about 5 minutes so the flavor soaks in.
Add the sauce: Spread 1 tablespoon of BBQ sauce on each flatbread. You can add a little extra if you like it saucy!
Layer the toppings: Top each flatbread with the BBQ chicken, then sprinkle with about 1 cup of shredded mozzarella (or a mix of mozzarella and cheddar). Add thin slices of red onion and sweet pepper if using.
Bake: Bake the flatbreads for 10–12 minutes, or until the cheese is melted and starting to brown, and the edges are nice and crispy.
Finish and serve: Let the flatbreads cool for a couple of minutes, then sprinkle with chopped fresh cilantro or parsley. Serve with a dollop of sour cream or Greek yogurt and a squeeze of lime, if you like.

I used one large lavash flatbread. I often buy the one at Aldi supermarket.
