Ingredients

  • 4 cups chicken broth
  • 1 pound ground Italian sausage , browned and drained

  • 2 Russet potatoes , peeled and cubed
  • 1 14 ounce can diced tomatoes
  • 1 6 ounce can tomato paste
  • 1 cup heavy cream
  • 1 8 ounce block cream cheese , cubed
  • 1/2 cup Parmesan cheese , shredded
  • 1 teaspoon garlic , minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Garnish: Fresh parsley

Instructions

  • Brown sausage in a skillet over medium heat until cooked through. Drain excess grease.
  • Add to crockpot sausage, chicken broth, onion, potatoes, diced tomatoes, tomato paste, garlic, salt, Italian seasoning, and pepper to the slow cooker. Stir to combine.
  • Cover and cook on high for 3½ hours or low for 5½ hours, until potatoes are tender.
  • Stir in heavy cream, cream cheese, and Parmesan cheese. Mix until melted and creamy.
  • Cover and cook on low for 30 minutes more.
  • Stir again before serving and garnish with fresh parsley. Enjoy warm!

Notes

I used large Russet potatoes, if you only have smaller sized potatoes, I would use 3-4 potatoes.
Storage: Cool to room temperature then store in an airtight container, in the fridge for 5 days. I don’t recommend freezing due to the potatoes and dairy.

  • Swap the sausage: Use turkey sausage instead of pork for a lighter option that still adds plenty of flavor.
  • Try different potatoes: Yukon gold potatoes hold their shape beautifully and make the soup extra creamy.
