Pebre is one of my favorite recipes of chilean food. It's tasty, fresh, and has unique flavors that really satisfy that feeling of needing something enriching to eat. Some call pebre chileno an appetizer, some a sauce, or even a condiment. It's a really diverse dish with many uses. You could eat it only with bread, crackers, eat it with French fries, top your meat with it, and much more!
Rinse tomato, bell pepper, and cilantro in cold water. Finely dice them, and toss in a bowl.
Chop and dice an onion, then add it in the bowl. Cut a fresh lemon, and squeeze it over ingredients.
Toss a pinch of salt, and a light drizzle of olive oil. VOILA! Serve pebre with pretzels, crackers, or tortillas.
