RAISE YOUR HAND IF YOU LOVE SALMON!
Growing up in Chile, I ate salmon at least once per month. It’s so tasty, has lots of protein, and did I mention it’s tasty? Here’s what I love most about Chilean salmon:
- It blends ingredients into a tasty dish that you normally wouldn’t expect together.
- The salmon roasts in juice from the ingredients, so it’s not dry inside like a lot of salmon.
- Each bite has a unique and savory flavor that melts in your mouth.
The best part of this recipe is that you don’t need to add salt, being that is has chorizo, which is a powerful and flavorful seasoned pork meat.
What I Love About Chilean Salmon
It’s one of the best ways to make salmon, in my opinion. The recipe is simple, yet easy to impress your friends and family. The chorizo adds a bold flavor to the salmon as it’s baked in the oven in a drizzle of olive oil. The boldness isn’t overwhelming, and it adds a layer of flavor that perfectly balances the mild salmon-y taste.
What’s In This Dish?
We have a really simple and delicious ingredient list for you.
- Filet of Chilean salmon (serves six people)
- Chorizos (you can use pre-sliced chorizo from any deli store)
- Large tomato
- Adobo
- Italian seasoning
- Olive oil
- Mozzarella cheese
Let’s Bake It!
To kick things off, we’ll pre-heat the oven to 450°F. While it’s heating up, go ahead and slice the tomato into small slices (about 7). You’ll want to do the same to the chorizos (about 40 thin slices, if you are using 2 chorizos).
Next up, place your salmon over tin foil on a flat pan. The foil should be big enough that you can wrap it over top of the salmon (the salmon cooks in the juice of the ingredients).
Drizzle olive oil over the entire salmon and make sure it spreads evenly. Then sprinkle about a spoonful of adobo and Italian seasoning over the salmon. Now is when you add the tomato slices and chorizos you cut. Spread them evenly over the entire salmon.
Cover your salmon with the foil, and throw it in the oven for 25-30 minutes. Once the timer is up, remove the salmon, lift the top foil, and sprinkle over a cup of mozzarella cheese. I like to add just a pinch of Italian seasoning on the cheese, just for presentation. Cover it again, and throw it in the oven for 5 more minutes. Then BAM! It’s done.
This dish pairs well with roasted garlic potato, and green beans. But if you really want to impress your guests (and this is my preference), make it with Garlic Parmesan Asparagus!
Chilean Style Salmon Baked In Oven

As you might know, I'm part Chilean, and grew up between Argentina and Chile. My inspiration for this tasty dish comes from how we cooked it locally. This unique recipe is flavorful, and is a different way to cook salmon than you might be used to. It's really easy to prepare, and with a short list of ingredients that are all you need to give it that feel of a 5-star restaurant dish. I hope you enjoy it!

Pre-heat oven to 450°F. Place Chilean salmon over aluminum foil on a flat pan. Make sure foil is big enough to wrap over top of the salmon. Drizzle a thin layer of olive oil over the salmon, covering it completely.
Don't drench the salmon in oil. The oil is only to absorb the flavors, and to distribute them into the salmon. -
Prepare a cup of mozzarella cheese, a tomato, two chorizos, a spoon of Italian seasoning, and a spoon of Adobo.

Sprinkle the Italian seasoning and Adobo onto the salmon. Cut the chorizos into thin slices (about 15-20 slices per chorizo), and slice the tomato (about 7 slices per tomato). Place the chorizo and tomato slices on the salmon, covering it entirely.

Cover the salmon with tin foil, and place in the oven for 25-30 minutes. When the timer is up, take out the salmon, remove the foil, and add mozzarella cheese. Sprinkle over a pinch of Italian seasoning (for presentation). Place in oven for 5 more minutes.

Serve with garlic potato, and green beans (or my favorite, Garlic Parmesan Asparagus). Yum!
