Description

I love vegetable soup with chicken. Or is it chicken soup with vegetables? Either way, this soup is perfect to warm your belly and make you feel at home and cozy. It's also an excellent soup to eat when you're not feeling well, considering it has 150%+ DV of vitamin C per bowl. If you're wondering how to make a vegetable soup without buying box broth, then this recipe is for you!

Ingredients
  • 1 Chicken Breast (Boneless, Skinless with Rib Meat)
  • 1 cup Peas
  • 1/2 cup Bell Pepper (Green)
  • 1/2 cup Bell Pepper (Red)
  • 1 Rib of Celery
  • 1/4 Onion (White)
  • 1 Ear of Corn
  • 1 cup Squash (Sliced)
  • 1 cup Carrots (Chopped)
  • 1 Head of Broccoli
  • 2 Potatoes
  • 5 cups Water (Filtered)
  • 1/2 teaspoon Salt
  • 3 dashes Paprika
  • 2 dashes Pepper
Instructions
  1. Chop chicken breast into bite-sized cubes.

  2. Cut ear of corn into about six pieces. Dice up potatoes, red and green bell pepper, celery, squash, and carrots. Then cut off 12 florets from head of broccoli.

    A floret of broccoli is a little tree sticking off the head.
  3. Chop and dice onion, then add the onion with chicken cubes in soup pot to sauté for 5 minutes.

    Add the salt, pepper, and paprika while sautéing.
  4. Add five cups of water to pot. Add corn, carrots, squash, celery, red and green peppers. Let cook for 20 minutes, on level 7 heat.

  5. Add broccoli, potatoes, and peas to pot. Cook for 10 more minutes. Let cool, and serve!

    You can also add rice or noodles if you want. Just throw them into the pot when you add the broccoli, potatoes, and peas.
