A CLASSIC VEGETABLE CHICKEN SOUP RECIPE!
This homemade vegetable soup is super healthy for you, filling, and isn’t loaded with sodium like many soups. Here’s what I love about our vegetable chicken soup recipe:

What I Love About Chicken Soup With Vegetables
As you might know, if this isn’t your first time stopping by to check out one of our recipes, I’m not too fond of onions. That’s why I only used 1/4 of an onion for this recipe. But, you can use more if you’d like. Onions add more flavor to the soup. And let me tell you, this chicken vegetable soup recipe has TONS of flavor.
I really love the ingredients in this dish because you get something different in every spoonful. Maybe a piece of crunchy celery, a bit of chicken, perhaps a plump pea. It’s just a really yummy, classic soup.
What’s In This Dish?
We have a really simple and delicious ingredient list for you; although a bit longer than normal. But that’s because it’s a soup!
- Boneless, Skinless Chicken Breast
- Peas
- Celery
- Onion
- Corn
- Squash
- Carrots
- Broccoli
- Potatoes
- Red & Green Bell Pepper
- Salt, Pepper, & Paprika
Let’s Make It!
We’ll start by chopping up your chicken breast into bite-sized cubes. Make sure it’s boneless and without skin. Everything will be cooked on the stovetop, so no need to pre-heat the oven.
Next, cut your ear of corn into about 6 pieces. Then dice up your potatoes, peppers, celery, squash, and carrots. After that, cut off about 12 florets from your head of broccoli.
- NOTE: a floret of broccoli is a little tree sticking off the head.
Dice up your onion, then throw the onion in a pot with the chicken cubes to sauté for about 5 minutes. You can add your salt, pepper, and paprika while you’re sautéing.
After the 5 minutes is up, add five cups of water, and your hard vegetables: corn, carrots, squash, celery, and red and green bell peppers.
Let it cook for about 20 minutes (set the stovetop heat to level 7).
Once the 20 minutes is up, finally, add the broccoli, potatoes, and peas.
Let it boil for another 10 minutes.
After that, let it cool for five minutes, and serve!
- OPTIONAL: if you want to, you could also add rice or noodles. Just throw them into the boil when you add the broccoli, potatoes, and peas.

Cut ear of corn into about six pieces. Dice up potatoes, red and green bell pepper, celery, squash, and carrots. Then cut off 12 florets from head of broccoli.

Chop and dice onion, then add the onion with chicken cubes in soup pot to sauté for 5 minutes.
Add the salt, pepper, and paprika while sautéing. -
Add five cups of water to pot. Add corn, carrots, squash, celery, red and green peppers. Let cook for 20 minutes, on level 7 heat.

Add broccoli, potatoes, and peas to pot. Cook for 10 more minutes. Let cool, and serve!
You can also add rice or noodles if you want. Just throw them into the pot when you add the broccoli, potatoes, and peas.
