Description

Are you dieting? If so, you should definitely check out some squash recipes. This particular appetizer is great because it's low in carbohydrates, they're really tasty, and they've got nearly 60% DV of vitamin A in each snack slice! Butternut squash is also a great choice for this recipe (instead of bread) because when you bake the slices, they get hard like potato chips, but are still tender!

Ingredients
  • 1/2 Butternut Squash
  • 1 Tomato
  • 2 Eggs (Boiled)
  • 1 cup Mozzarella Cheese
  • 1 Drizzle Olive Oil
  • 1 teaspoon Adobo Seasoning
  • 1 dash Italian Seasoning
Instructions
  1. Pre-heat the oven to 450°F, and boil a few eggs.

  2. Cut a squash in half, and cut it into about 7 slices (1/4 inch thick each). Line pan with aluminum foil, spray with olive oil, and place the squash slices on it. Place in oven for 10 minutes.

  3. Remove butternut squash slices from oven. Sprinkle with Italian seasoning and adobo.

  4. When eggs are boiled, dice them and a tomato into small cubes. Add egg and tomato cubes on squash slices, and top with mozzarella cheese. Place in oven for 3 minutes, or until cheese is melted. VOILA! Serve.
