A CLASSIC ARGENTINIAN/ITALIAN CHICKEN DISH!
Today we bring you a really easy and tasty way to eat chicken. If you didn’t know already, I’m from Argentina. This dish is really popular in my country, with deep roots stemming from Italy. Over 60% of Argentina’s population have Italian descent, so we’ve got to give the Italians credit! Here’s what I love about chicken milanesa, or as we call it in Argentina, milanesa de pollo:
- You can eat milanesa with almost anything.
- It’s really fast to cook and delicious.
- They store well in the freezer, so you can make a few batches and freeze what you don’t cook.

Let’s Bake It!
I love roasting chicken in the oven! It gets so juicy. And luckily for us, this milanesa recipe calls for chicken (you can use other meats, too). We’ll start by slicing the chicken breasts – 3 filets per breast. Set them aside for now.
Next, mix your egg and milk in a bowl, either by hand or with an electric whisk mixer. Add salt, parsley, pepper and minced garlic. You can use garlic from a jar, which is quickest, or mince it yourself. It’s up to you!
This mix is what will give the chicken its flavor, and we’ll also use it to coat the chicken so it sticks to the bread crumbs. Place the chicken filets you cut into the mixture, and let them sit for 10-15 minutes. Meanwhile, pre-heat the oven to 430°F.
While the chicken marinates and the oven heats up, fill a flat pan with your bread crumbs.
Once the 10-15 minutes is up for the chicken to soak in the garlic pepper mixture, place each filet onto the bread crumbs. Make sure each side is covered completely with the crumbs.
Then you’ll want to cover another flat pan with tin foil, spray it with cooking oil, and place your breaded chicken filets on it.
Once the oven reaches 430°F, thrown the chicken filets in to bake. Cook them for 10 minutes, then take them out and flip them. Throw them back in the oven for another 10 minutes.
When the timer is up, remove them from the oven and paint each filet with tomato sauce (I prefer tomato and basil). Place a piece of ham over each filet, and sprinkle mozzarella cheese over them. My first little secret with this chicken milanesa recipe is to then add blue cheese on top.
Put them back in the oven for two minutes (or until the cheese is melted). And that’s it! You’ve got a DELICIOUS chicken milanesa course, Argentinian Napolitan style.
The most famous way to serve this dish is with homemade French fries, but you could also serve it with salad, rice, or mashed potatoes.
- My second secret with this chicken milanesa recipe is to let the pre-sliced chicken filets marinate in the garlic pepper mixture the night before. It makes the chicken more flavorful and soft, which does make a noticeable difference with each bite!

Pre-slice chicken breasts - 3 filets per breast.

Place pre-sliced chicken inside garlic pepper mix. Let sit for 10-15 minutes.
While letting chicken filets soak in mixture, pre-heat oven to 430°F. -
Cover a flat pan with bread crumbs. After 10-15 minutes of the filets soaking in mixture, place each in the bread crumbs. Cover both sides fully.

Place tin foil over another flat pan, and spray with cooking oil. Put the filets on the pan, and throw them in oven for 10 minutes.

After 10 minutes, remove filets from oven, flip them, and put back in oven for 10 minutes.

Remove filets from oven, and paint each with tomato sauce, a slice of ham, and mozzarella cheese. Then place in oven again for 2 minutes (or until cheese is melted).
Secret #1: add a little crumbling blue cheese over each filet, before putting in oven for last 2 minutes. -
Remove the chicken milanesas from the oven, and VOILA! Serve with French fries, salad, rice, or mashed potatoes.
Secret #2: Let the chicken filets marinate in the garlic pepper mixture the night before. It makes the milanesas more flavorful, and noticeably softer with each bite!

Note
This is one of my favorite dishes. You can also use other meats to make these milanesas, like beef.
