- 1/2 cup onion , diced
- 3 cloves garlic , minced
- 1 teaspoon dried oregano

- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt

- 3 Tablespoons Italian style tomato paste
- 4 cups chicken broth , divided
- 1 28 ounce can crushed tomatoes
- 1 25 ounce frozen cheese ravioli
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese
- 1/2 cup ricotta cheese
- fresh basil or parsley , for serving
Instructions
- In a large stock pot over medium-high heat, add 1 Tablespoon olive oil. Add 1 pound ground beef and 1/2 cup diced onion. Cook until onions are tender and beef is cooked through. Add 3 cloves garlic and all seasonings and cook for another minute.
- Add 3 Tablespoons Italian style tomato paste and stir for another 30 seconds.
- Add 3 1/2 cups chicken broth and 28 ounce can crushed tomatoes and bring to a simmer. Cook covered (to avoid splatter) for 20 minutes.
- Combine the remaining 1/2 cup broth with the 1/2 cup heavy cream and slowly add into the soup. Add in the frozen cheese ravioli. Stir to combine then add the 1/2 cup Parmesan cheese. Simmer for 5 minutes to cook ravioli.
- Remove from heat and stir in ricotta cheese.
- Ladle into bowls and garnish with fresh herbs and more Parmesan if desired.
